Didier Leroy leads the passionate team in the jewel-box dining room at LSL, where, with just nine seats, each guest is treated with exquisite focus and care. Leroy has more than 50 years of experience as a chef, yet as a certified master of French cuisine, he remains a humble student.
At LSL, Leroy’s soulful interpretations of the cuisine of his homeland are married to the explosive talent of Masaki Saito, the only chef in Canada with two Michelin stars. Saito’s exacting mastery of Edomae sushi technique, and his intimate relationships with the best Japanese food producers, provide LSL and its team with a depth of knowledge, and extraordinary products, unavailable elsewhere.
Enter Christian Le Squer, a Paris-based legend and three-star Michelin chef for the past 23 years. Le Squer is lending his name for the first time to a project in Canada. Like Leroy and Saito, Le Squer, remains a lifelong student of the culinary arts. His focus at LSL: to bring an artist’s lens to the task of refining a menu where the goal is to perform daily acts of magic for our guests.
